Christmas Pudding Protein Balls

It’s the first of December which means it’s the start of ’12 Days of Goodmas’!. For the next 12 days I’m going to be posting one of my favourite healthy, ‘good for you’, plant based recipes every single day!

So, I thought it was only right to kick start #Goodmas with a Christmas recipe. Vegan, GF, healthy and refined sugar free, these balls are the perfect festive treat!

Ingredients
Protein balls:
1/2 cup cashew butter
2/3 cup chocolate vegan protein
3 medjool dates
1 tbsp maple syrup
Zest of 1 orange
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger

Frosting:
1/2 cup cashews, soaked overnight
1/2 cup canned coconut cream
3 tbsp maple syrup
1 tsp vanilla extract

Method
Combine all ingredients for the protein balls in a food processor. If the mixture is too dry add a dash of water. Roll into balls. Set aside
Combine all ingredients for the frosting in a blender until thin. Drizzle over the balls. Decorate with goji berries and sprinkles.
