Paleo Zucchini Bread

Grain free, dairy free, refined sugar free and delicious! This high protein, low carb bread is the perfect addition to your paleo plate!

YOU WILL NEED;
+ 75g Coconut Flour
+ 110g Milled Linseed
+ 2 medium courgettes, grated
+ 1 tbsp honey
+ 3 Eggs
+ 100ml Coconut Oil, melted
+ 100g Egg Whites
+ 2 tsp baking powder
+ pinch of salt

INSTRUCTIONS ;
Combine all of the dry ingredients in a large bowl (coconut flour, milled linseed, baking powder and salt). Ensure all lumps are removed.

Combine all of the wet ingredients in a bowl (coconut oil, eggs, egg whites, honey and courgette).

Slowly pour the wet ingredients into the dry mixture. Combine to form a ‘dough’.

Pour into a greased loaf tin and bake at 180 for 55 minutes (or until golden). Leave to cool for 15 minutes before slicing 🌿
