PUMPKIN PROTEIN PANCAKES

Fluffy, sweet and filling it’s hard to believe these pancakes are flourless, diary-free and high in protein!

INGREDIENTS:

+ 40g oats, blended into a flour

+ 100g pumpkin purée

+ 1 tsp baking powder

+ 40g soy protein powder

+ 250ml unsweetened almond milk

METHOD

1. Combine all ingredients in a blender. Blend until well combined.

2. Pour 1 heaped tablespoon for 1 pancake onto a hot frying pan. Cook on each side until golden.
